How about a PC template rewrite so that not all of the categories are mandatory? The categories can't be removed for individual pages. If you wish to exclude a label such as 'status' or 'instance' by leaving it blank or using a '-' as per the instructions, you get a placeholder tag of 'unknown' or a blank row.
