I don't know that this is something we've really established a hard and fast rule on, but I'd lean towards more varied than rigidly uniform. I'll let Shakahn weigh in on that.

Actually, no. Membership in any Claw has nothing to do with what the furless deem as guild membership. Instead it is a facet of being chosen by one of the Three for a purpose. Members of the Claw of Eu are chosen due to their sharp memories so that they can best retain accurate recollections of our past and stories to pass along to the next generations.

Membership in the Claw of Demrris on the other hand were chosen by Demrris to be the arbiters and keepers of tradition. They work with the Claw of Eu when rulings are needed. The Claw of Eu will provide any background information that might be needed, but leave the ruling itself to the Claw of Demrris.

Both groups are divinely chosen and inspired and this may lead to them being thought of as priests in some viewpoints but it does not mean they were "Clerics" as we think of the guild structures. Keep in mind that the Prydaens didn't utilize any guild structure or acknowledgement as they do in the east, but rather everyone strove to hunt and live in tune with the lands but utilizing whatever methods most suited them. Some were more martial than others, some stealth based, others utilized magics of various leanings studied from other similiarly minded folks but never through formalized studies.
