Yes, that is correct.

Hunting in DR only requires 2 defenses. I'm saying you could choose not to use any shield (or parry weapon) at all, and it won't break the flexing mechanics. The flexing mechanics do not care if you have a shield or a sword or are laying motionless on the ground with your neck extended :P
