But what's the point in grinding astrology if you don't like the system? Just circling?

They do not switch, no. Creatures from the Plane of Probability are, generally speaking, either shadows made manifest, light (specifically starlight) made manifest or concepts made manifest. Older lore strongly emphasized the shadow aspect which is something we still haven't really balanced out as far as creatures (Though the concept creatures have gotten a lot more lore around them in the last few years).

As for WHY that's what lives on the Plane of Probability, that's a very complex question on which modern mages can only speculate.
